The Seafood Club

Fish is my passion. I love to catch them, I love to cook them, and I really love that I can make a living selling them.  After I closed my restaurant Eat'n Meet Grill and larder in Saranac Lake New York I was faced with a very tough choice. I could go into a kitchen working for someone else and lose the freedom of voice that I had come to cherish or I could once again reinvent my way of earning a living. If you know me, you know that there really was no choice. I believe that to be truly free one must be true to their passion. 

I feel honored that you have chosen me to be your fishmonger, or more accurately- your poissonnier (fish chef). Club members are treated to the very freshest and sustainable fish that I can get my hands on. I sell to several of the best restaurants in the Adirondacks, and my elevator pitch to chefs is that I, as an Escoffier trained chef am able to be their eyes in the fish market. I do not sell the cheapest fish around, but I do sell the freshest. Most of my chef clients simply give me a request for a certain weight of fish, and then leave the selection to me. I walk the market, find the fish that cries out fresh, cut it and bring it for their weekend specials. Chefs love to see an ingredient and become inspired, and I give them this opportunity with each delivery. Of course all of the fish that I sell has to pass my strict scrutiny, and is exceptionally fresh. I just like to add the element of surprise for your inspiration!
